There's A Word for This

My sister-in-law and I were talking last night...what's the word for that feeling of urgency and desperation you have right before things get better? Like, remember in college when it was the week before spring break and you were like, "Thank God it's almost here because I definitely couldn't do another week of school without a vacation." Somehow you're able to power through, but only because you know that relief is right around the corner. Or a more crass example - when you have to pee even worse *right* before you're about to go?
Whatever the word for it is, that pre-spring break, pre-pee feeling, I totally have that right now. I don't know what I'd do if T weren't coming back on Friday. I honestly don't think any of us could do another week apart. We've been there, we've seen what it's like, we've mined the depths of our patience (or lack thereof, ha), stamina, and sanity, and for better or worse, we've almost made it to the other side.
I have a pretty long mental list of all the things I'm looking forward to when he returns. Obviously, ranking close to the top is having someone to cook - and enjoy - adult food with. I've really missed planning meals, trying new recipes, and sitting down with my favorite person over a glass of wine and a 10-pm dinner. Even breakfast - that morning ritual of mapping out our day together over a bowl of granola - provided a moment of connection that I'm excited to recreate.
Ah, yes, granola. You and I have shared our favorite recipes, and while I've generally managed to keep our pantry stocked with the homemade variety, last week I threw in the towel and went for a store-bought variety. Well, ma cherie, what a fortunate turn of events....because it led to the discovery of a most amazing Paleo Coconut Granola from Hip Foods, a gluten-free bakery specializing in paleo and gluten-free foods, based in Kellogg, Idaho. It's incredible, Sar, the most delicate jewel-like clusters, a totally satisfying crunch, and best of all, a mastery of that elusive salty-sweet balance that so many granolas get wrong. Interesting fact - egg is listed as one of the primary ingredients. Have you seen this before? Is that part of what makes it so fabulous???
Sadly it doesn't look Hip Foods is taking orders on their website, but visit here to see if you can find a retailer in your area. In the meantime, here's to instant store-bought breakfasts. There's definitely a word for that: genius.
